GF Banana Bread

3 Over Ripe Bananas
1 tsp Vanilla Extract
3/4 Cup Cane Sugar
2 Tbsp Ground Flaxseed + 6 Tbsp Water
8 Tbsp Melted Butter
Ingredients:
Wet
1 Cup + 1/2 Cup Gluten free Flour
1 tsp Baking Soda
1/2 Tsp Salt
1/4 Tsp Cinnamon
1/8 Tsp Nutmeg
Dry
Preheat: Preheat the oven to 350°F (175°C).
Prepare Wet Ingredients: In a large bowl, mix the flaxseed with water and set aside until thickened. Using a fork, mash the bananas in the same bowl until mostly smooth but with small chunks. Add the vanilla extract, sugar, and melted vegan butter, mixing well between each addition until fully combined.
Combine Dry Ingredients: Add all the dry ingredients (flour, baking powder, baking soda, salt, and optional spices) into the wet mixture at once. Whisk until just combined. Avoid overmixing.
Bake: Pour the batter into a prepared greased loaf pan or scoop into muffin-lined tins. Bake for 55 minutes for the loaf or about 20 minutes for muffins. Use a toothpick to check for doneness; it should come out clean.
Cool and Serve: Let the banana bread rest in the pan for 10 minutes, then carefully flip it onto a plate to cool. For muffins, cool in the tin for a few minutes before transferring to a wire rack. Serve slightly warm with vegan butter!
