Kale Root Salad

14oz Extra Firm Tofu
1 Sweet Potato
3 Golden Potatos
1 Avocado - cubed
Kalamata Olives
Kale - about 8 oz
Spinach ( Optional)
Olive Oil
Salt
Black Pepper
Ingredients:
Lemon Olive Oil Dressing:
Mix equal parts lemon juice and olive oil in a bowl or jar. Add salt and pepper to taste. Adjust the seasoning or ratios based on your flavor preference. Shake or whisk until well combined.
Marinade for Tofu:
4 TBSP Balsamic Vinegar
2 TBSP Dijon Mustard
1 TBSP Olive Oil
1 tsp Oregano
1/2 tsp Salt
1/2 cup water
Marinate: Drain and cut tofu into bite-sized cubes. Place in a sealable container, mix marinade ingredients and pour over tofu. Shake to coat, then let it marinate for 30 minutes.
Prepare Veggies: Preheat the oven to 400°F. Dice sweet potatoes and regular potatoes, then toss them separately with olive oil, salt, and pepper. Sprinkle the golden potatoes with thyme. Spread them on separate baking trays and bake for 15-25 minutes, flipping halfway through.
Air Fry Tofu: Coat an aluminum sheet lightly with olive oil and spread the marinated tofu on it. Air fry at 365°F for about 20 minutes, flipping halfway through.
Prepare Kale: Lightly coat kale and spinach if using with dressing and massage the dressing in.
Assemble and Serve: Combine the seasoned kale, kalamata olives, roasted sweet potatoes, golden potatoes, and crispy tofu in a bowl. Add extra salt, pepper, or dressing if desired. Enjoy!
