  • 1 Pack Extra Firm Tofu(14-15.5oz)

  • 3 Large Garlic Cloves (minced)

  • 1 Cup Vegan Chicken Broth

  • 2 Tbsp Vegan Butter

  • Olive Oil

  • Creole Seasoning

    Optional :

  • Rosemary Mashed Potatoes

  • Veggie (Like Broccoli)

Ingredients:

Marinade

  • 1 Cup vegan Chicken Broth (Water + 1 Vegan Chicken Bouillon Cube)

  • 2 Tbsp Tamari

  • 1 Tbsp Nutritional Yeast

  • 1 Tsp Apple Cider Vinegar

  • ½ Tsp Smoked Paprika

  • ½ Tsp Dijon Mustard

  • ¼ Tsp Salt

  • 1/8 Tsp Black Pepper

  1. Marinate Tofu – Cut the tofu in half lengthwise to create two long slices. Mix all the marinade ingredients together and soak the tofu overnight. Score one side of each slice to help it absorb more marinade.

  2. Preheat Oven – Set oven to 400°F (200°C).

  3. Prepare Baking Sheet – Lightly oil a parchment-lined baking sheet with olive oil. Sprinkle Creole seasoning lightly on one side of the tofu, then place that side facing down on the parchment. Brush the top with olive oil and coat with more Creole seasoning.

  4. Bake Tofu – Bake for 15 minutes, then flip and bake for another 15 minutes. If desired, flip again and bake for an additional 5 minutes for a crispier texture.

  5. Prepare Garlic Butter – Mince garlic and sauté in a pot with a drizzle of olive oil until slightly golden. Add vegan butter and melt, then pour in vegan chicken broth. Let the mixture cook down until thick, then set aside.

  6. Make Rosemary Mashed Potatoes – In the same pan, prepare rosemary mashed potatoes. (Shortcut: Use potato flakes.) Mix in half of the garlic butter for extra flavor.

  7. Serve – Plate the tofu with mashed potatoes and veggies. Drizzle the remaining garlic butter on top and enjoy!

Instructions:

    • I used extra-firm tofu because it marinates the best. For a more chicken-like texture, freeze the tofu before starting the recipe or use super-firm tofu
