Pecan Pumpkin Danish

Pumpkin Cream Cheese
1/2 Cup Pumpkin Puree (130g)
1/2 Cup Vegan Cream Cheese (130g)(See Notes)
2 TBSP Brown Sugar
1 tsp Cornstarch
3/4 tsp Cinnamon
1/2 tsp Vanilla
1/4 tsp Nutmeg
1 Pack Jus Roll Puff Pastry
2 TBSP Vegan Butter (Optional)
Cinnamon Sugar
1/4 Cup Sugar (40g) + 2 tsp Ground Cinnamon
Ingredients:
Pecan Topping
2/3 Cup Pecan Pieces (80g)
1/4 Cup Brown Sugar (55g)
1/4 Cup Agave (90g)
1/2 tsp Cinnamon
1 TBSP Melted Butter (20g)
Prepare Filling: In a bowl, whisk together all of the pumpkin cream cheese ingredients until smooth.
Pecan topping: In a separate bowl, combine the pecans, brown sugar, agave, and cinnamon. Melt the butter, then pour it into the pecan mixture and stir until evenly coated.
Prep the puff pastry: Cut the puff pastry into 6 squares. Score a smaller square inside each one, leaving about 1/4 inch on the edges. Add about 2 tablespoons of the pumpkin cream cheese filling to the center of each square, then top with the pecan mixture, using as much as desired. Brush the edges of the pastry with melted butter and sprinkle lightly with the cinnamon sugar mixture.
Bake: Bake at 400°F (200°C) for 10-15 minutes, or until the pastry is golden brown. Let cool slightly before serving.

I used Miyoko’s Cream Cheese. it has a bit of an after taste, so a more neutral cream cheese is recommended. However do not use Simple Truth Cream Cheese, it will be gooey.
Don’t put too much cinnamon sugar on the crust, as it can burn/melt off.
