Loaded Potato Soup

This hearty and comforting vegan potato soup is the perfect way to warm up on a chilly day. The creamy texture comes from a blend of cashews and vegetable broth, making it a rich and satisfying meal without any dairy.

  • 8 Russet Potatoes

  • 1 Small Onion - diced

  • 4-5 Garlic Cloves - minced

  • 4 Cups No Chicken Broth

  • 2 Bay Leaves

  • 1 TBSP Lemon Juice

  • 1 Cup Violife Shredded Cheddar Cheese

  • Olive Oil

Optional :

  • Simple Truth Sour Cream

  • Green Onions

  • Bacon-less Bits

Ingredients:

Seasoning Mix

  • 1/2 tsp Smoked Paprika

  • 1/2 tsp Paprika

  • 1 tsp Umami

  • 1 tsp Salt

  • 2 tsp Thyme

  • Black Pepper


Cashew Cream

  • 1/2 Cup Cashews

  • 1 Cup Unsweetened Soy Milk

  • 1 Cup No Chicken Broth(Separate from the 4 cups)

  • 2 cooked Russet potatoes



  1. Prep the potatoes: Preheat oven to 450°F (230°C). Place potato halves on a lined baking sheet and bake until tender, about 45-60 minutes. Allow to cool, then use a spoon to scoop out rough chunks of potato pieces, 2 full potatoes will be used for the cream sauce. Toss the skin.

  2. Prepare the cashew cream: Soak cashews in boiling water for 10 minutes, then drain. Blend cashews and soy milk. Add the 2 scooped potatoes and the broth, and blend again until smooth and creamy.

  3. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onion with salt and pepper, cook until slightly browned then add garlic and cook for an additional minute. Add in the seasoning mix and cook for an additional minute.

  4. Make the broth: Add the reaming scooped potato chunks, vegetable broth, bay leaf, and lemon juice to the pot. Bring to a boil, then add the cashew cream sauce and whisk. Add in the Cheddar Cheese and whisk again, allow to simmer for 5-10 minutes.

  5. Serve: Serve topped with vegan sour cream, additional cheese, chopped green onions, black pepper, and vegan bacon bits!

    • Cashews don't have to be soaked before blending, but it does make it easier!
